Before Applying a HACCP Plan--
Follow These Five Steps

1. Establish a team of individuals having detailed knowledge and experience of the process to be analyzed.

2. Describe the food involved and any process-related methods.

3. Categorize the intended use and consumers of the food.

4. Establish a flow diagram for the process outlining the steps involved (a simple block diagram is sufficient).

5. Verify the flow diagram through on-site inspection of the operation.
